Place in a roasting tin with raised edges near the middle of the oven.
Medium: Cook for 20 minutes per 500g plus 20 minutes, Well done: Cook for 25 minutes per 500g plus 25 minutes.
Stand for 10-15 minutes, remove string before carving.
